After the summer I'll be starting my AS Levels and will take:

English Literature, Psychology, History, Chemistry and Drama/Theatre Studies

I know Drama is a "soft subject" but it will be a lesson I enjoy, even though I'm not persuing it as a career.

I'm hoping to do something in either Law or Psychology and was wondering if these subject will look good when applying for uni or if they block one of my chosen career paths.

I don't know, if I was you I'd look through university prospectuses you'd like to go to for degrees in law and things and see whether they have reccomendations for A-level subjects that are desirable. You sound to have chosen some good subjects but to do things like science at some universities I have to have either 2 science A-levels and maths or 3 science A-levels, but I personally don't know about law/psychology and whether they have preferences.
If you can't find any information then, when you go to college I'd advise you speak to someone there about your choices and see if they can recommend anything as if you need to change your subject they will let you usually within the first two weeks anyway.

I can answer for law as I intend to apply myself =D. English literature and History are very strong subjects, which have a lot of neccessary skills needed in law, so they are perfect (I'm doing them both too). Chemistry is perfectly fine too (as there are no set ones for law, they only want ones which are strong subjects). Psychology is still a new science, but it's by no means a micky mouse subject, so that would be fine too, especially as a fourth option - even if not as strong as the others. Drama as you know isn't liked much by the top unis, but as a fifth a level - most people take 4 - it doesn't much matter, especially if you enjoy it. IT could also be very valuable if later in law you're required to be a good orator.

That's for the top unis though, as you move down they care less abotu subjects being weak etc.

For Law, I'd say Sociology, History or Politics are probably better to take rather than Drama. I did Performance Arts (pretty much the same thing) for AS and it was fucking bullshit.
