What does your signature

iż Polacy nie gęsi, iż swój język mają."...translate as in English?

It's "old" polish, wrote this Mikołaj Rej in 1562, when most of artist in Europe wrote in latin langauge. It means sth like:
"Let all others nations know
that polish aren't geese* and they their own langauge have"

*Why "geese"? - in middleages some people in Poland had contemptuously saying that latin is geese's langauge because of similary sound.

I know a little of Poland. From an economic and historical viewpoint.

Red and white flag. Capital Warsaw. Invaded by Germany in 1939 pretty much kicking off the second world war. During the war was run largely by a Polish government in London which then got replaced by a Soviet puppet government at the beginning of the cold war.
